Cheese Filings Cupcake

This cupcakes are the bomb! Made about 30 of them but all finished within a blink of an eye. Seriously is a must try recipe.

Ingredients:
‎Ingredients A:
4 eggs
160g castor sugar

Ingredients B:
350g plain flour
2 tsp baking powder
1/4 tsp salt

Ingredients C:
130g fresh milk (i used fullcream milk instead because its more economical and creamy)
130g room temperature butter

Filling:
200g cream cheese
100g castor sugar

Decoration:
Chocolate rice



Method:
1. Beat Ingredients A until white, fluffy and smooth
2. Mix and sift Ingredient B. Add the sifted Ingredient B into Ingredient A that have been beaten just now gradually. Stir. Make sure there is no lumps.
3. Add in butter and milk into the mixture.
4. Now, prepare the filing. Add sugar into the cream cheese which are in room temperature. Make sure that both of it combines together well, or until sugar have melted.
5. Line cupcake cups on a tray. Pour in the mixture of Ingredients A, B and C earlier until it reaches 1/4 of the cup. Then add a scoop of the filling. Top up with mixture again. Decorate with chocolate rice.
6. Preheat the oven to 170 degree celcius, approx 10min.
7. Bake the cupcakes for 15min, with 170 degree celcius. After the time is up, take a knife poke inside. It should come out clean, if not bake for another 5min.
6. Ready to serve. Best eaten when hot.
